Vegan (well, kinda) Pumpkin Muffins

The consistent downpour, wind and 40 degree weather all equalled one thing:  Baking!  But it also equalled NO trips to the store.  I had one can of pumpkin in the cupboard, no eggs, but a lot of spices.  So, I googled eggless pumpkin muffins and found this vegan recipe.  I modified it quite a bit based on what I already had in the kitchen (remember, there was no way I was stepping foot outside that day...it was a jammers all day, kinda day).





  • Of course, this post would be better suited for October or November.  However, when it feels like November, these muffins fit right in. 




  • The only way to eat these are sliced in half horizontally, slightly toasted with a smidge of butta!

    I always do that on rain or snow days....get the craving to bake and have to figure out a recipe with what's on hand. This one sounds yum. I love pumpkin. B is addicted to Starbucks pumpkin loaf. Addicted!

    oh am, don't even get me started on my love for pumpkin....I will have to try this, we are having rain here. Perfect day to bake :)

    My perfect type of recipe... using what's on hand, and I totally agree, with that weather, pumpkin's perfect (spring or otherwise :).

    Yesterday, I was so mad. I had just enough time to bake a tart that I'd been wanting to (forever), and everything was set to go. I opened the cupboard, and barely any sugar. Many hours later, I finally finished it. :)

    It feels a lot like fall here too and my kids are vegan so I might try these tonight. They look yummy
