Polka Dot Salad: A Market Post

Club Sprouts does it again with an amazing little polka dot salad.  The kids love creating a snack at the Club Sprouts tent and I love watching them eat their veggies.  The base of this salad is Trader Joe's brown rice medley.  The polka dots included diced peppers, carrots, red onions, and cucumbers.  The secret to its flavor is mixing apple cider vinegar in with the rice.  Yum and easy to create at home!

that is exactly how i'm "cooking" this week... base items (rice mixes, soup, etc) from tj's with a bit of freshness [or frozen veggies :)] mixed in.

ryan was away last week, and has been incredibly busy in the weeks leading up to his trip, and i have honestly felt like a SLAVE in the kitchen (even though he often cooks w me!)... the endless dishes are a big part of this feeling. so, on sunday, i went to tj's and got majorly stocked up...

i needed a couple of weeks of EASY so i can attempt to catch up with the rest of my life.

i hear you! if you are not averse to a little chopping and dicing, the kids could assemble their own, you could bake some chix breasts in the oven and call it a day.
